You can also deep fry if preferred 5️⃣ Meanwhile cut the red onion & spring onions into large chunks (keep the spring onion greens separate)  6️⃣ Prep the sauce, in a small bowl, mix the dark soy sauce, sweet chilli, sriracha, honey & a little splash of water to loosen 7️⃣ Add the chopped red onion & spring onions whites to a hot wok with a little oil and the light soy sauce & cook on med-high heat for a minute 8️⃣ Then add the minced garlic & ginger stir & continue cooking for another 1-2 mins 9️⃣ Mix in the prepped sauce and bring to a simmer for 1 min before mixing in the crispy mushrooms & half the spring onion greens  1️⃣0️⃣ Heat through for a minute & garnish with the remaining spring onion greens
