If you want to take this to another level, instead of straining before plating, pour it in to a nutribullet and blend the shallot into the sauce. More flavor, same smooth texture

Guys, the cream acts as a binder, with all the damn butter, the flavor of the cream is lost, it’s simply there to help it from breaking.
