Perfect Pavlova Ingredients: Pavlova: 1 wedge of lemon (for cleaning your mixing bowl) 6 large eggs, whites only 1½ cups caster sugar 6 tsp cornflour (cornstarch) 1½ tsp white vinegar Splash of vanilla To decorate: 600ml thickened cream 3 tbsp icing sugar Splash of vanilla Fresh fruit of your choice Grated chocolate Extra icing sugar for dusting Method: Grab your stand mixer and whisk attachment. Use your wedge of lemon to wipe out the mixing bowl. This helps remove any leftover grease or fat, which can stop your egg whites from whipping properly. Separate your eggs, making sure you only get the whites into your mixing bowl. Save those yolks because I'll show you what to do with them in the next video! Add your caster sugar, cornflour, white vinegar and vanilla. Whack your mixer on and beat for around 8–10 minutes until the mixture is thick, glossy and lovely. Rub a little between your fingers. If you can still feel sugar granules, keep mixing until they're gone. Grab a baking tray, give it a spray with cooking oil and pop your baking paper on top. Spray the baking paper as well so it stays in place. Spoon your pavlova mixture onto the tray and spread it into whatever shape you like. I used a mini palette knife to create some little ridges around the sides to make it look pretty. Pop it into a preheated oven at 120°C fan forced for 1½–2 hours, until the outside is firm to the touch. Mine took 1 hour and 40 minutes. Turn the oven off, leave the door slightly ajar and let your pavlova cool completely inside the oven. Once completely cool, whip your thickened cream with the icing sugar and vanilla until stiff peaks form. Pile that lovely whipped cream on top, add your favourite fruit and finish with some grated chocolate and a dusting of icing sugar. And there you have it! The perfect pavlova, ready for Christmas Day. Enjoy! #pavlova #christmasrecipe #christmasdessert #EasyRecipe #easybaking
