Disability-Friendly Oxtail Pho 2 lbs oxtail 1/4 cup lime juice 1 tsp salt 2 cups frozen onion, defrosted   1-2” piece ginger  1 Pho spice bag, in storefront 8 cups water 2 tbs fish sauce 1 tbs MSG 2 tsp brown sugar Salt, to taste Rice sticks Optional toppings: Hoisin sauce Chili oil Sriracha  Thai basil leaves  Cilantro leaves Frozen onions, defrosted Thai chilis Lime juice  Soak oxtail in water and lime juice for an hour. While it soaks, place your pho spice in a small baking pan. Toast the pho spices in the air fryer at 400 for 3 minutes. Put pho spice in the spice bag.  Place onion and ginger in the same pan. Brown the onion and ginger in the air fryer at 400 for 10 minutes.  Rinse and pat dry oxtail well. Place oxtail in the same pan. Coat in salt. Brown the oxtail in the air fryer at 400 for 15 minutes.  While the oxtail browns, add water, spice bag, onions, and ginger to slow cooker on low. Add oxtail to slow cooker and cook for 1 hour. After the hour, remove spice bag and ginger from the slow cooker.* Continue cooking on low for 2 hours. Remove onions with a strainer and continue cooking until oxtail are tender, about 6 more hours.  Refrigerate overnight. Remove white fat layer with a spoon and turn slow cooker back on to heat it up.  Add fish sauce, MSG, and sugar. Serve over prepared rice sticks. Add optional toppings of choice.  *Note: It is very important to remove the spice bag or the flavor will be extremely strong and bitter. #Recipe #autism #downsyndrome #wheelchair
