@sugarpatisserie: 🫐 Blueberry Basque Mousse | So purple and dreamy, one bite and you're in a fantasy world. 🫐 Blueberry Basque Mousse 🌈 Blueberry Sauce 🔸200g frozen blueberries, 40g sugar, juice from half a lemon. Cook it down until it's nice and thick, then let it cool and set aside. 🌈 Vanilla Basque 🔸300g softened cream cheese, 55g sugar, 5g vanilla paste, 6g cornstarch, 2 room temp eggs. Blend everything until super smooth. 🔸Add 120g room temp heavy cream and gently fold it in. 🔸Strain the mixture into a 6-inch chiffon mold. 🔸Preheat your oven to 230°C, then bake at 210°C for about 23 minutes. 🔸Let the Basque cool down completely, then pop it in the fridge for at least 4 hours. 🌈 Blueberry Mousse 🔸150g softened cream cheese, 15g sugar. 🔸Mix until it's nice and smooth. 🔸Add 50g blueberry sauce and mix well. 🔸Whip 160g heavy cream until it's soft peaks, then fold it into the mousse mixture. 🔸Add 10g softened gelatin sheets and 80g blueberry sorbet, mix until combined. 🔸Pour the mousse mixture over the chilled Basque cake and let it set in the fridge for 3 hours. 🌈 Vanilla Blueberry Shaved Ice 🔸Freeze the Want Want blueberry sorbet overnight until it's solid. Then just shave it with an ice shaver to get that fluffy texture. 🔸Start with a layer of vanilla sorbet, add some blueberry sorbet on top, drizzle with blueberry sauce, and finish with a sprig of mint for decoration. 🌈 Blueberry Cream for Frosting 🔸180g heavy cream, 20g blueberry sauce, 10g sugar.
