Ginger-Lime Beef Stir-Fry with Snap Peas & Baby Corn Ingredients 1 lb (450 g) flank steak or sirloin, thinly sliced against the grain 1 tbsp neutral cooking oil 2 cups snap peas 1 cup baby corn, drained and halved diagonally if large 2 cloves garlic, finely minced 1 tbsp fresh ginger, finely grated Sauce 3 tbsp low-sodium soy sauce 1 tbsp oyster sauce 1 tbsp honey 1 tsp cornstarch 2 tbsp water 1 tsp toasted sesame oil 1 tbsp fresh lime juice 1 tsp finely grated lime zest Instructions Whisk the soy sauce, oyster sauce, honey, cornstarch, water, and sesame oil together. Keep the lime juice and zest separate. Heat a large skillet or wok over medium-high to high heat. Add the oil and cook the beef in 2 batches so it sears instead of steaming, about 1–2 minutes per batch. Transfer to a plate. Add the snap peas and baby corn. Stir-fry for 2–3 minutes, keeping the snap peas crisp. Add the garlic and ginger and cook for about 30 seconds. Return the beef to the pan. Stir the sauce again, pour it in, and toss for 1–2 minutes, just until it lightly clings to the beef and vegetables. It should not become a thick, sticky glaze. Remove from the heat, then stir in the lime juice and lime zest. Adding the lime at the end keeps the citrus flavor bright. Serve immediately with steamed rice or noodles. #whatsfordinner? #followmyrecipes #newrecipesposteddaily #yummilicious
