Blueberry Jam Streusel Muffins 🫐✨🌸 Ingredients: Muffin Batter •450g all-purpose flour •230g granulated sugar •15g baking powder •4g baking soda •5g salt •4 eggs •240g Greek yogurt •180g whole milk •90g neutral oil •90g unsalted butter, melted •10g vanilla extract •280 g fresh blueberries Topping •180g blueberry jam Streusel •100g all-purpose flour •80g brown sugar •60g cold unsalted butter •Pinch of salt Instructions: 1.Prepare the streusel by combining the flour, brown sugar and salt. Rub in the cold butter until large crumbs form. Refrigerate while you prepare the muffin batter. 2.Preheat the oven to 220°C and line a jumbo muffin tin with 24 tulip liners. 3.In a large bowl, whisk together the flour, baking powder, baking soda and salt. 4.In another bowl, whisk the sugar ,oil, melted butter, yogurt, milk, vanilla extract and then eggs then whisk until smooth. 5.Add the dry ingredients to the wet ingredients and fold together just until no dry flour remains. Do not overmix. Gently fold in the blueberries. 6.Divide the batter evenly among the muffin liners, filling each almost to the top. 7.Spoon about 1 teaspoon of blueberry jam onto the top of each muffin. Do not swirl. Sprinkle generously with the chilled streusel, gently pressing it into the jam so it adheres during baking. 8.Bake for 7 minutes at 220°C. Without opening the oven, reduce the temperature to 190°C and continue baking for 18–22 minutes, or until the tops are golden brown and a skewer inserted into the cake portion comes out clean.
