Salted Caramel Cupcakes 🧁 These mouthwatering cupcakes have salted caramel in every bite! The perfect showstopper dessert to bring to any holiday party! Ingredients  * 1 cup + 3 tbsp (188 g) all-purpose flour, spooned and leveled * 1 tsp baking powder * 1/4 tsp baking soda * 1/3 tsp salt * 7 tbsp (93 g) unsalted butter, softened * 1 cup (200 g) granulated white sugar * 1 large egg * 1 egg yolk * 1 tsp almond extract * 2 tsp vanilla extract * 2/3 cup (160 ml) buttermilk, room temperature For the salted caramel frosting * 1 cup (224 g) unsalted butter, softened * just under 1/4 tsp salt * 1/3 cup (93 g) salted caramel sauce (store bought or homemade) (see previous video for homemade recipe) * 2 cups (260 g) powdered sugar 1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners. 2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. 3. In a large bowl, beat the butter and sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes. 4. Add the egg and egg yolk. Then mix in the almond extract and vanilla extract. 5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined—do not overmix. 6. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. 7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. While cupcakes cool make your frosting. 8. In a large bowl, beat the butter and salt on medium speed for 2-3 minutes until creamy. 2. Add the salted caramel sauce, and beat until combined. 3. Gradually add the powdered sugar, 1/2 cup at a time, mixing on low speed until smooth and fluffy. Continue beating for 2-3 minutes after all the sugar is incorporated. 4. Once the cupcakes are completely cooled, cut out center and fill with 1.5 tsp of caramel. frost them generously with the salted caramel frosting and drizzle with left over caramel sauce.
