@100lunchboxes: 就是一道好吃的便當菜 食材(3-4人份) • 牛小排火鍋肉片 250g • 蘆筍 1 把(約250g,切4-5公分段) • 黃檸檬 半顆(2~3小匙) • 蒜頭 5瓣(拍碎) • 植物油 1小匙 醃料(依序加入) 1. 醬油 1大匙、黑胡椒½小匙 2. 清水 2大匙 3. 植物油 1小匙 調味 黑胡椒 少許(點綴) 鹽巴 ⅛ 小匙 料理步驟 1. 牛肉依序用醃料、水抓勻,最後以油封住,靜置10分鐘。 2. 鍋中加入植物油與拍碎的蒜頭,以小火慢慢煎出香氣。 3. 轉中大火放入牛肉,平鋪約10秒後快速翻炒至變色,盛出備用。 4. 倒入蘆筍,加1大匙水悶炒約30-45秒至蘆筍斷生。(可以蓋鍋蓋燜約30秒) 5. 轉大火,放回牛肉,加入鹽巴翻炒均勻。關火後加入約2-3小匙檸檬汁快速翻勻。最後灑上黑胡椒點綴即可。 Lemon Beef with Asparagus Ingredients (Serves 3–4) • 250 g thinly sliced beef short plate • 1 bunch asparagus (about 250 g), cut into 4–5 cm pieces • ½ lemon (2–3 tsp juice) • 5 cloves garlic, lightly crushed • 1 tsp cooking oil Marinade (add in this order) • 1 tbsp soy sauce + ½ tsp black pepper • 2 tbsp water • 1 tsp cooking oil Seasoning • ⅛ tsp salt • Freshly ground black pepper, to taste Instructions 1. Marinate the beef by mixing it with the soy sauce and black pepper. Add the water and massage until absorbed, then coat with the cooking oil. Let rest for 10 minutes. 2. Heat the oil in a pan over low heat. Add the crushed garlic and cook until fragrant. 3. Increase to high heat. Add the beef in a single layer and let it sear for about 10 seconds before stir-frying until just cooked. Remove and set aside. 4. Add the asparagus to the pan. Pour in 1 tbsp water and stir-fry for 30–45 seconds until crisp-tender. You can cover the pan for about 30 seconds to help steam the asparagus. 5. Return the beef to the pan over high heat. Season with the salt and toss well. Turn off the heat, add 2–3 tsp lemon juice, and quickly toss to combine. Finish with freshly ground black pepper before serving.
