Here's the recipe 👇 Serves: 4 | Calories: ~460 kcal | Protein: ~33g per serve Ingredients • 225g 2% cottage cheese • 2 hard-boiled eggs (~100g without shells) • 30g freshly grated Parmesan cheese • 180g milk of choice • 1.5g cornstarch (optional) • 3g garlic powder • 1g Italian seasoning • 3g salt • 0.5g black pepper • 340g dry high-protein fettuccine • Fresh parsley, to serve • Extra Parmesan, to serve (optional) Method 1. Add the cottage cheese, hard-boiled eggs, Parmesan, milk, cornstarch, garlic powder, Italian seasoning, salt and pepper to a blender. Blend until completely smooth and creamy. 2. Pour the sauce into a skillet or saucepan over medium-low heat. Cook for 3–5 minutes, stirring frequently, until warmed through and slightly thickened. Do not let it boil. 3. Cook the pasta according to packet instructions, reserving a little pasta water before draining. 4. Toss the cooked pasta through the sauce. Add a splash of reserved pasta water if needed to loosen the sauce. 5. Garnish with fresh parsley and extra Parmesan before serving.
