This Pepper Steak is a simple recipe that can made in under 1 hour for a weeknight dinner. Full recipe is posted below and on my blog (check bio) My cookbook, Let’s Get Into It, is currently on sale at its lowest price on Amazon! Ingredients: •1 Pound Flank Steak, sliced into thin strips •1 Red Bell Pepper, chopped •1 Green Bell Pepper, chopped •1 Medium Yellow Onion, chopped •Pinch of Salt, for vegetables •2 Tablespoons Avocado Oil, or neutral oil of choice, to cook steak & vegetables Steak Marinade: • 2 Tablespoons Low-Sodium Soy Sauce • 4 Cloves Garlic, minced • 1 Tablespoon Avocado Oil, or neutral cooking oil of choice • 2 Teaspoons reduced-sodium Rice Vinegar •1½ Teaspoons Cornstarch •½ Teaspoon Black Pepper •½ Teaspoon Granulated White sugar, or brown sugar •½ Teaspoon Baking Soda Sauce: •½ Cup Low-Sodium Soy Sauce •2 Tablespoons Beef Stock, or unsalted beef stock •2 Tablespoons reduced-sodium Rice Vinegar •1½ Tablespoon Granulated White Sugar, or brown sugar •2 Teaspoons Cornstarch •¼ Teaspoon Black Pepper •(optional) 2 Tablespoons of water, to dilute if too salty for your taste Instructions: 1. Pat steak dry. Thinly slice flank steak against the grain into about ¼-inch strips. Add steak into a medium-sized bowl. 2. For the steak marinade, toss the steak in soy sauce, minced garlic, oil, rice vinegar, cornstarch, black pepper, sugar, and baking soda. Mix well and fully coat the steak in the marinade. Cover the bowl and refrigerate for at least 15 minutes, up to 1 hour. 3. To make the sauce, in a separate medium-sized bowl add in soy sauce, beef stock, rice vinegar, sugar, cornstarch, and black pepper. Mix and whisk together ingredients well. Set aside. 4. When ready to cook, heat a large skillet to medium-high heat. Add in 2 tbsp cooking oil. Once oil is hot, shimmers and easily moves around the skillet, add steak to the skillet in batches. Be sure not to overcrowd the skillet. Sear steak for about 1 minute to brown and then flip over to continue cooking for an additional 1 minute to brown. Remove from the skillet and repeat until all of the steak is cooked. 5. Once done cooking the steak, reduce heat to medium, add in more oil if necessary, then toss in chopped onion and chopped bell peppers. Sprinkle with a pinch of salt and saute for a couple of minutes until onions and peppers are slightly softened. 6. Next, pour the sauce into the skillet, stir and simmer for a few minutes until the sauce thickens. Then, toss the steak into the skillet and mix well until all ingredients are combined and the steak is reheated. Serve and enjoy.
