In Western P.E.I We call This Green Bacon. I think the proper term is Pork Belly maybe im not sure. I believe it was called green as a slang term, Green ment it was uncured. Im not sure what the other parts of the island call it, all I know is it is delicious !

mm we used to bread it, fry til crispy then make an onion cream gravy with the drippings. So good, so many memories!

Oh I haven’t had side pork for ages. It’s hard to find here. I always laid it on top of my home made beans and let it cook with that. Yummy!!

My gram made grease gravy, mixed it in with the mashed potatoes, and topped it all with vinegar and onions. One of my favorite meals to this day! Sometimes hard to find side pork.
