Ingredients: - 1 whole chicken (about 4 lbs) - 4 cloves garlic, minced - 2 tablespoons fresh rosemary, chopped - 1 lemon, halved - 3 tablespoons olive oil - Salt and pepper to taste - 4 large potatoes, cut into chunks - 2 cups seasonal vegetables (carrots, zucchini, bell peppers) Instructions: 1. Preheat oven to 425°F (220°C). 2. In a small bowl, mix garlic, rosemary, olive oil, salt, and pepper. 3. Rub the mixture all over the chicken, including inside the cavity. 4. Stuff the lemon halves inside the chicken cavity. 5. Place the chicken on a roasting pan, breast side up. 6. Arrange potatoes and seasonal vegetables around the chicken. 7. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and juices run clear. 8.
