Peri Peri Chicken & Halloumi Traybake  This was an absolute banger 😍 everything cooks on one tray making it a super easy and simple dinner that the whole family can enjoy. Plus it’s a good recipe to meal prep and keep in fridge for 3 days 👌🏼

1 tbsp olive oil 
2 tbsp nandos peri rub (can sub for peri seasoning, be mindful of one’s loaded with chillies!) 
1 tsp smoked paprika 
600g baby potatoes halved 
4 sweetcorn cobettes 
2 red peppers cut into chunks  1 large red onion cut into wedges
100g reduced fat halloumi sliced 
3-4 sprigs of fresh parsley finely chopped  
For the drizzle:  50g fat free greek style yoghurt
15g lighter mayo 
1 tbsp peri sauce (use less if spice sensitive) 
Pinch of salt  💕Preheat the oven to 200 degrees celsius (180 fan). 💕Toss the chicken thighs with the olive oil and 1 tbsp peri rub.  💕Add the chopped baby potatoes with the remaining peri rub and smoked paprika. Once combined, place on a large roasting tray along with the cobettes.  💕Roast for 10 minutes before turning the potatoes and cob over. Add the peppers and onions and return for a further 30 minutes. (You can add them in at the start, I like to give the chicken and potatoes a head start on cooking)  💕In the final 10 minutes of cooking, add the halloumi slices on top. (For extra golden halloumi, pan-fry separately and add just before serving.)

💕Whilst the bake cooks, mix together the drizzle ingredients. 

💕Remove the traybake from the oven, scatter with fresh parsley, and serve with the peri yoghurt drizzle over the top.
