Try this tip! 📌 HOW TO: • Take a small piece of dough after your stretch & folds + coil folds are done • Put it in a glass of water • When the dough ball floats, it can be a sign bulk fermentation is done After experimenting, I think this can be a helpful visual tool…especially when you’re first learning what properly fermented dough looks and feels like. BUT, don’t forget to look at your actual dough too… 👀 SIGNS TO LOOK FOR: • Rise in the dough • Bubbles throughout + around the edges • A domed top • A dough that feels airy/jiggly • Pulling away from the sides of the bowl Bulk fermentation is a window, not one perfect moment you have to catch. Your environment, dough temp., starter strength and recipe can all change that window. The more you practice, the better you get at reading YOUR dough. is it normal that my starter rise very quickly but when i do my loaf it never double.in size and i get a dough that is not nice i left it to ferment 8 hrs for a 28 Celsius degrees and stretched and fold 4 times what am i doing wrong the starter is 2 months aged and is very strong

A lot of baking experts note that it only tells you if the dough has air, not if it has completed its gluten development or fermentation. I have more success with the Aliquot Method

Thanks for trying this for your followers! It works almost every single time I do it!! I noticed (and shared with my followers) the only time it didn’t work was when I tried it with a higher hydration dough and when my starter wasn’t at peak and I didn’t do any stretch and folds! Anyway, thanks for trying this, works amazing for me and I learned I was over bulk fermenting most of the time!! Love your videos by the way!! So down to earth!
