The important part is refrigerating it within about two hours of cooking and storing it properly in an airtight container. It will generally keep for 4 to 6 days in the refrigerator. People even buy pre-cooked frozen rice at the grocery store. I’ve been eating refrigerated rice almost daily for decades myself, and it’s never been an issue. The key isn’t avoiding refrigerated rice. It’s handling and storing it properly.
