@bakes_by_brea: mango, raspberry and blueberry chocolate cupcakes💛🩷💜 i love how colourful this cupcake set was😌 what fruit should i try next? lol🙈 Recipe— 1. MAKE CHOCO CUPCAKES. Add in all wet ingredients and sugar in one bowl and mix well. In separate bowl, mix all dry ingredients. Then add dry ingredients mixture into wet ingredients mixture, mix until well combined. 2. Fill cupcake cases with batter and bake at 180°C for 20mins. Let it cool. 3. MAKE MANGO/RASPBERRY/BLUEBERRY BUTTERCREAM. Puree mango/raspberries/blueberries using blender and place in saucepan. bring to boil and then simmer, and reduce until thick. Let it cool completely. 4. Then beat butter until creamy. add powdered sugar and beat until well combined. then add raspberry puree and salt, and mix on low until combined. 5. MAKE MANGO/RASPBERRY/BLUEBERRY FILLING. Whisk cornstarch and water until combined. then in saucepan over medium heat, add all ingredients except vanilla. boil for 5mins, crushing the fruit as they soften. 6. Remove from heat and add in vanilla. Cool before use. 7. ASSEMBLE. Use 1A nozzle to pipe buttercream around top edge of cupcakes. *see notes 8. Then fill centre with mango/raspberry/blueberry filling. 9. Top with fresh fruit and thyme. 10. Dust with icing sugar.
