Bolinha de Queijo (Brazilian Cheese Balls) 🇧🇷✨ It can’t get any simpler and more delicious than this. Bolinho de queijo is legendary in Brazil and now you can make a big batch for your next party or stick them in the freezer ready for the Airfryer. They are easy, quick and everyone (including kids) go crazy for them. Perfect with Tabasco or mayo, they are crispy and gooey every time. Ingredients (for 30 balls) 500ml chicken stock 200ml whole milk 2 tablespoons butter 1/2 teaspoon salt 1/2 tsp aromat 1 tsp ‘colorau’ (this is a natural colouring agent, totally optional in this recipe) 2 cups all-purpose flour 250g cubed of grated mozzarella 2 cups of fine golden breadcrumbs 2 eggs mixed with 1/4 cup water Method Start by melting the butter in a large pot over medium heat. Once melted, pour in the stock and milk, then stir in your seasonings. Bring the mixture to a gentle bubble. Next, add the flour and start mixing vigorously. This step takes a bit of elbow grease, keep stirring until the dough pulls away cleanly from the sides of the pot and forms a smooth ball. Transfer the dough onto a lightly floured surface and knead until it’s silky and uniform. Divide the dough into 30 equal portions and roll each into a ball. Press a small well into the center of each ball, fill it with a piece of mozzarella, then carefully seal and roll it back into a smooth, stuffed ball. Dip each ball into a beaten egg and water mixture, then coat thoroughly in breadcrumbs. Heat oil to 175°C and fry the balls in batches for 3–4 minutes, or until golden and crispy. Avoid overcrowding the pot to ensure even frying. Once done, drain on kitchen paper to soak up any excess oil. Serve hot and enjoy!
