@jenksbbq: Sweet Tea Brined Brisket is one I keep coming back to because it flat-out works. The sweet tea brine helps make this brisket tender, juicy, and packed with flavor. This time I seasoned it with Double Pepper Cow Cover from @KOSMOS Q , smoked it low and slow, wrapped it when the bark was set, then rested it in the Pitbox Pro before slicing. Recipe: • 2 gallons @Red Diamond Tea sweet tea • 2 cups salt • Brisket • Double Pepper Cow Cover from Kosmos • Beef tallow • Pitbox Pro for the rest Mix the sweet tea and salt until fully combined. Place the trimmed brisket in a container, pour in the brine, cover, and refrigerate for 24 hours. Remove the brisket, pat off some of the excess brine, and season on all sides. Smoke at 250° until the bark is set, then wrap and continue cooking until the brisket is probe tender. Rest, slice, and enjoy. This is still one of my favorite ways to cook brisket.
