Perfect for kids, but also for adults who want to reduce added sugar.☺️ Ingredients: • 1 ripe banana, mashed • 1 egg • 1/3 cup Greek yogurt — about 80 g • 1/4 cup whole milk — 60 ml • 1 tbsp melted butter — about 14 g • 1/2 heaping cup all-purpose flour — about 70–75 g, added gradually • 1 tsp baking powder - 6g • Cinnamon, optional Mash the banana very well with a fork. Add the egg, Greek yogurt, whole milk and melted butter, then whisk until combined. In a separate bowl, mix the flour, baking powder and cinnamon, if using. Add the dry ingredients gradually to the wet ingredients and mix gently until combined. The batter should be thick but still pourable — thicker than crepe batter, but not as thick as dough. It should slowly fall from the spoon, not run like water. If the batter is too runny, add 1 more tablespoon of flour. If it feels too thick, add 1–2 tablespoons of milk. Heat a pan over low-medium heat and lightly grease it with butter or oil. Add small scoops of batter and cook for about 2–3 minutes, until bubbles start to appear and the edges look set.
