I just bought my 1st smoker. An electric Pit Boss and after reading all the comments, don't know if I made a mistake in buying it. My hubby used to do all the smoking but he passed away and I've been craving smoked ribs. So I bought a smoker but I didn't know it was this confusing.

250 for 3 hours no wrap, add sauce at 2.5 hour mark. Perfect baby backs every time.

2hrs at 275 to 300, wrap in foil and toss em back in till they reach 205 pull em and let them rest for 20 to 30min👍

Any time you wrap ribs they get steamed in the process resulting in a softer wetter bite. For me a little mushy. I prefer to not wrap my ribs and keep them moist with an apple cider spritz. They are very tender and have just a pull off the bone bite rather than slide off the bone bite

5 hours is too long for baby backs. the 2 2 1 method is decent for spare ribs though. still a little long though

Most people who eat ribs & don’t bbq themselves would love a 3-2-1 method & fall off the bone. The real ones know that it’s overcooked & prefer a bite..
