Easy Picadillo Ingredients * 1 lb extra lean ground beef * 2 medium potatoes, diced into small cubes * 2 carrots, diced * 1 small onion, diced * 2-3 garlic cloves, minced * 1 (8 oz) can tomato sauce * 1 cup water * Fresh cilantro, chopped Seasonings (all to taste) * Salt * Black pepper * Cumin * Garlic powder * Oregano * Chicken bouillon Instructions 1. Dice the potatoes into small cubes and place them in a bowl of cold water while you prep the remaining ingredients. This helps remove excess starch. 2. Dice the carrots and onion, the garlic. 3. Heat a large pan over medium heat and add a drizzle of olive oil. 4. Add the onions and a pinch of salt. Cook for 2-3 minutes until softened, then add the garlic and cook for about 30 seconds. 5. Add the ground beef and season with salt, pepper, cumin, garlic powder, oregano, and chicken bouillon to your taste. 6. Cover and cook for about 5 minutes, or until the beef is browned. 7. Add the diced potatoes, carrots, tomato sauce, and 1 cup of water. Stir everything together. 8. Cover and reduce the heat to medium-low. Let it simmer for 20-25 minutes, stirring occasionally and checking that the potatoes and carrots become tender. 9. Once the vegetables are cooked through, stir in freshly chopped cilantro and let it cook for another 1-2 minutes. 10. Serve warm with white rice and enjoy! You can add more salt or pepper to taste
