Crispy Sweet Chilli Chicken 🌶️  This Crispy Sweet Chilli Chicken is everything you love about a Chinese takeaway, made even better at home. Serves 3 Chicken * 600g boneless, skinless chicken thighs, cut into bite-sized pieces * 1 tbsp light soy sauce * 1 egg * 80g cornflour * 45g plain flour * Pinch of salt * ½ tsp white pepper * Pinch MSG (optional) * Oil, for frying Stir Fry * 1 onion, sliced * 1 red pepper, sliced * 1 tbsp chopped garlic (I use frozen) * 1 tsp chopped ginger (I use frozen) * 2 spring onions, sliced Sauce * 4 tbsp sweet chilli sauce * 2 tbsp light soy sauce * 1 tbsp dark soy sauce * 1 tbsp oyster sauce * 1 tbsp honey * 1 tbsp rice vinegar * 1 tbsp Shaoxing wine (optional) * ½ tsp sesame oil * 80ml water * 1 tsp cornflour mixed with 1 tbsp water * Pinch MSG (optional) To Finish * Sesame seeds * Fresh red chilli, sliced (optional) Method 1. Marinate the chicken with the light soy sauce for 10 minutes. Add the egg, then coat with the cornflour, plain flour, salt, white pepper and MSG until every piece has a rough, craggy coating. 2. Heat oil to 180°C. Fry the chicken until golden brown and cooked through. Remove and rest for a couple of minutes while you turn the heat up slightly, then fry again until deep golden and extra crispy. 3. Mix together all the sauce ingredients except the cornflour slurry. 4. Heat a wok with a drizzle of oil. Stir-fry the onion, red pepper and spring onions for 2–3 minutes. Add the garlic and ginger and cook for 30 seconds. 5. Pour in the sauce and bring to a simmer. Stir in the cornflour slurry and cook until thick, sticky and glossy. 6. Add the crispy chicken and toss for 20–30 seconds until coated. Finish with sesame seeds and fresh red chilli if using.
