Apple pie cookies  For the apple pie filling: -2x large apples (peeled and chopped into small cubes) -40g salted butter  -50g brown sugar -2 tsp cinnamon -1/4 tsp nutmeg -2 tbsp lemon juice  -1/2 tsp cornflour   -3 tsp cold water For the cookies: Ingredients: -125g salted butter (105g if not browning) -120g caster sugar -60g light brown sugar  -1x egg (room temperature) -2 tsp vanilla extract  -200g plain flour -1 tsp baking soda -2 tsp cinnamon  -1/2 tsp nutmeg  -1/2 tsp allspice  -1/4 tsp ground cloves  Method for filling: -Simmer chopped apples, salted butter, brown sugar, cinnamon, nutmeg and lemon juice in a saucepan until the apple have mostly softened. -Mix together cornflour and cold water. -Pour the cornflour slurry into the simmering apples. Mix until thickened then set aside to cool. For the cookies: -Add butter to a saucepan and melt over low/medium heat, stirring consistently. The butter will start to foam, keep stirring until the butter turns a golden brown/amber colour. Let cool for 15 minutes.  -Whisk cooled brown butter, brown sugar and caster sugar until combined. -Add egg and vanilla extract and whisk until combined. -Fold in flour, cinnamon, nutmeg, allspice, ground cloves and baking soda. -Take 1-2 heaped tbsp of cookie dough (approx 50g-60g) and roll into balls. -Chill cookie dough balls in the freezer for 1 hour. -Bake at 160C for 12-17 minutes. -Use the back of a tablespoon to create an indent. -Once the cookies cool, add the apple filling into the indent. -Optional: Drizzle with caramel sauce  Happy baking! #applepiecookies #applepie #cookies #baking
