Creamy Chicken, Bacon & Leek Loaded Crispy Potatoes 😍  Bringing you some warm comfort food on this cold day 🤣 basically inspired by one of my favourite pie fillings but loaded on to crispy potatoes for a quicker and easier dinner that you can have midweek.  PS for more quick & easy recipes pre order my new cookbook “20 minute Low-Cal Kitchen Bangers” through the link in my bio 💕 Ingredients (serves 2):  For the crispy potatoes: 500g potatoes, cut into small cubes
½ tsp garlic granules
½ tsp smoked paprika For the creamy chicken filling: 40g smoked bacon diced 
300g chicken breast diced  ¾ tsp smoked paprika 
Salt  Black pepper
1 medium leek sliced  2 tsp chopped garlic  1 chicken stock cube crumbled 80g light cream cheese  100ml water ½ tsp dried thyme  20g parmesan grated  
💕Season the cubed potatoes with garlic granules, smoked paprika, salt, and pepper. Air fry at 190 degrees celsius for 20 minutes, shaking halfway, until golden and crispy. Alternatively, bake at 200 degrees celsius for 30-35 minutes. 
 💕Fry diced bacon and cook until crisp, then remove and set aside keeping warm. 
 💕Season the chicken with salt, pepper, and smoked paprika.  💕In the same pan,  add the seasoned chicken and pan fry until browned on all sides and mostly cooked through. 
 💕In the same pan, add sliced leeks and garlic. Sauté for 3-4 minutes until softened.
 💕Stir in the crumbled stock cube and water, and simmer gently for 3-4 minutes.
 💕Reduce heat to low, stir in cream cheese, and cook until it melts into a creamy sauce.  💕Add the thyme and parmesan before seasoning with salt and pepper. Stir until smooth.  💕Divide the crispy potatoes into two bowls. 
Spoon the creamy chicken and leek mixture over the top before topping with the crispy bacon bits.
