@vibeshef: The Juiciest Vitello Tonnato 🥩 Extraordinary dish at minimal cost and effort🔥 Don’t be afraid of the color, just make sure you cook your meat to a proper temperature 💪 Ingredients: 🥩 1 kg (2.2 lbs) of veal/beef eye of round or top round 🌶️ salt, pepper 🧄 Garlic 🌿 Rosemary 🍲 150 ml (2/3 cup) of white wine of broth 🐟 1 can of tuna 🫒 2 tbsp of olive oil 🐠 4 Anchovies filet 🥫 1 tbsp of mayonnaise (or replace with 1 boiled egg and 1 tsp of Dijon mustard) 🫛 3 tsp of capers Steps: 1️⃣ Season your veal/beef generously with salt and pepper on all sides. Sear it thoroughly in a hot, dry skillet until a rich crust forms on ALL sides. 2️⃣ Place the seared meat into a baking dish on top of a bed of fresh rosemary and garlic. Pour in the white wine or broth. 3️⃣ Bake at 130°C (265°F) for about 50 minutes. If your cut of meat is exceptionally thick, lower the oven temperature slightly and increase the roasting time. Use a meat thermometer to ensure the center reaches a safe internal temperature of 62-65°C (145°F). 4️⃣ Remove the meat from the oven, wrap it tightly in aluminum foil, and let it rest for 15 minutes to lock in the juices. 5️⃣ Let the meat cool completely, then slice it across the grain into very thin pieces. 6️⃣ To make the tonnato sauce, combine the canned tuna, olive oil, mayonnaise, anchovies, and capers in a blender. Process until smooth and velvety. 7️⃣ Assemble your platter however you prefer.
