Ribeye Steak with Cowboy Butter A thick-cut ribeye, dry brined for extra flavour and a better crust, served with a spicy, herby cowboy butter that’s perfect for dipping every slice into. Ingredients 2 thick-cut ribeye steaks Flaky sea salt 1 tbsp olive oil For the cowboy butter: 200g butter 3 garlic cloves, minced 1 tbsp wholegrain mustard 1 tbsp Dijon mustard Zest of 1 lemon Juice of ½ lemon 1 tsp smoked paprika ¼ tsp cayenne pepper ½ tsp chilli flakes Salt and pepper 1 tbsp chopped fresh thyme 2 tbsp chopped fresh parsley 2 tbsp chopped fresh chives Pat the steaks dry, season generously all over with flaky sea salt and place on a wire rack in the fridge for 1-5 hours. This helps draw out moisture, intensifies the flavour and creates a better crust. For the cowboy butter, gently melt the butter in a pan and add the garlic. Let it infuse for a minute or two, then remove from the heat. Stir through the wholegrain mustard, Dijon mustard, lemon zest, lemon juice, paprika, cayenne, chilli flakes, salt and pepper. Add the thyme, parsley and chives, stir well and leave to cool slightly so it thickens and emulsifies. Take the steaks out of the fridge 30 minutes to 1 hour before cooking. Heat the olive oil in a very hot pan and cook the steaks on all sides until a deep crust forms, cooking to your preferred doneness. Add a knob of butter, a few sprigs of rosemary, a few sprigs of thyme and a couple of lightly crushed garlic cloves, then baste continuously for the final minute or two. Remove the steaks from the pan and rest. Spoon over some of the herbs and buttery pan juices. Slice and serve with the cowboy butter on the side for dipping.
