Smoky Black Bean Stew and Rice 🫘🍚 An all-time classic. Rice and beans never fails; it’s a dish that tastes great, is easy to batch-cook, and is more nutritious than you might think — especially when you use black beans. Give this one a try friends 🌱 INGREDIENTS: For the stew: - 1/2 large red onion, sliced - 1/2 bell pepper, diced - 2 cloves garlic, minced - 1 tsp each cumin, smoked paprika, black pepper and salt - 1 tsp Ghana spice (or mix of aniseed, ginger, nutmeg and black pepper, optional) - 2 cans black beans (I use organic BPA-free) - 100ml vegetable stock - 1 can chopped tomatoes - 1 tbsp tomato purée - Juice of 1/2 lime, and coriander leaves (to serve) Method: - Heat some olive oil in a pan - Add in your onion and sauté for a few minutes until soft - Add your spices, followed by your garlic and tomato purée — stir through - Add in your chopped tomatoes, and stir through for 10 minutes to cook down - Add your chopped peppers, stir through and then add your Ghana spice blend (if you have it) - Add a pinch of salt to taste if needed - Drain your beans, add into the pan, stir through along with your vegetable stock, reduce the heat and simmer for 20 minutes - Serve up with fluffy white rice, garnish with coriander leaves and 1/2 lime, and enjoy 🫡🌱 #EasyRecipe #healthandwellness #fyp
