It's a safety thing, not a "goes bad" thing like food.
SodaStream bottles are made of PET plastic, and every time you carbonate, you're pressurizing that plastic to a decent amount of pressure, then releasing it. Repeated cycles like that cause micro-fatigue in the plastic over time — same idea as bending a paperclip back and forth until it weakens. On top of that, PET slowly degrades just from time and UV exposure, getting more brittle even if you're not using it much.
The expiration date (usually ~3 years from manufacture, stamped on the bottom) is SodaStream's estimate of when that fatigue/degradation reaches a point where the bottle could fail unpredictably under pressure — meaning crack, rupture, or in worse cases send plastic shrapnel flying. Since these are pressure vessels, they'd rather be conservative than have one blow.
So it's less "the plastic becomes toxic" and more "the structural integrity can no longer be trusted to hold pressure safely."

It only goes off because it is made to hold lots of pressure from carbonating the water it is completely fine to use it just covers the company in case it brakes under the pressure

Pete is the type of plastic used. In this case it’s a hardened type of PET that is more sturdy and reusable than regular PET bottles that you buy in store.
