Crazy. We have multiple locations averaging between 4-10 million in rev each. Our labor cost averages between 10-13% for quick service and sub 18% for full service. With management built in it’s around 25% tops. Doing 8 million a year I can’t even fathom how he can even get to 40% labor.

Prime example of showcasing the difference between revenue and cash flow…. You can make 8 million a year, but if you spend 8 million, you have nothing. But if you make 2 million a year and spend 1 million, you have 1 million. Bigger is not always better.

My restaurant is about 9.5 million to 10 million a year. We average around a 24% labor cost and a 23% food cost or 35% total COGS. We average 62-65 percent in person dining and 35-38 percent to-go/delivery. It is a tough industry, but if you keep everything in order, it is feasible
