Strawberries and cream tres leches cake 🍰🍓 sponge cake: 1 1/4 cup all-purpose flour 150g 1/3 cup freeze-dried strawberry powder finely ground 30g 1 1/2 tsp baking powder 1/2 tsp salt 5 large eggs, separated 3/4 cup granulated sugar (150g), divided 1/3 cup whole milk (80ml) 1 tsp vanilla extract 1 tsp strawberry emulsion (optional but recommended) (food coloring if you want strawberry color)  🍓Tres leches:  1 can evaporated milk (12 oz) 1 can sweetened condensed milk (14 oz) 1 1/4 cups whole milk 3-4 tbsp finely ground freeze dried strawberry powder or strawberry reduction  1 tsp vanilla extract 1/2 tsp strawberry emulsion  🤍Topping:  2 cups heavy cream 16oz  3-4 tbsp powdered sugar  Splash of vanilla  Pinch of salt  @Maddoughcookies Preheat oven to 350 F, lightly grease a 9x13 inch baking pan and set aside.  Seperate the egg whites and egg yolks into two separate bowls. To the egg yolks, add half the sugar and begin beating until pale. Once pale and creamy, add the vanilla and milk. Add the flour, finely crushed freeze dried strawberries, baking powder and salt. Fold in using a butter spatula (to avoid over mixing) then set aside.  Begin to beat the egg whites until frothy. Add the rest of the sugar and continue beating until whipped peaks.  Add half the whipped egg whites to the yolk mixture and fold in. Continue adding the whipped egg whites little by little until it’s all incorporated. Mix with a rubber spatula , do not mix with a mixer.  Pour into the baking pan and bake for 20-23 minutes. Let the cake cool down a bit before adding the tres leches.  Poke holes into the cake using a fork for better absorption.  In a bowl, add the condensed milk, evaporated milk, and whole milk. Mix well. Add the strawberry powder or strawberry reduction , then add the vanilla extract and mix until all incorporated. Let the mixture sit for a bit. Pour into the cake and let it absorb. Cover and refrigerate for at least 3 hours, then frost the cake. (Or frost the cake and chill in the fridge)  Topping: add the heavy cream, powdered sugar, vanilla and a small pinch of salt to a large bowl.
