guess my little cousins favourite fruit (very difficult edition) (for the coconut chia pudding) you’ll need: - 1/2 can (200ml) full fat coconut milk  - 4tbsp chia seeds - 2tbsp maple syrup / honey (for the granola): - 1tbsp butter / olive oil - 1/2 cup rolled oats - 3tbsp honey / maple syrup - 1tbsp sunflower seeds (for the mango purée): - 1/2 mango, roughly chopped  (to serve): - any yogurt you like! - fresh mango, cubed - fresh peach, sliced - desiccated coconut  - honey (optional) method: 1. begin by mixing the coconut milk, chia seeds and honey (or maple syrup if using) in a small bowl until throughly combined and no lumps remain (it’s totally normal to have some lumps in coconut milk, you can use a whisk if you prefer!). 2. pop in the fridge for at least 30 minutes whilst we get on with the rest. 3. meanwhile, melt the butter in a small frying pan on a medium heat and add in the oats, sunflower seeds and drizzle over the honey. 4. mix all together using a wooden spoon and ensure the oats are evenly coated. 5. cook for about 5-6 minutes or until the oats are beautifully golden brown. 6. gather into a compact neat flat layer on the pan and press with the back of your spoon. 7. remove the pan from the heat and leave to one side to cool completely. 8. meanwhile, blitz one half of the mango in a food processor / blender until smooth. 9. begin assembling by placing your yogurt of choice in a bowl, followed by the chia pudding. 10. layer on the fresh mango and peaches. 11. once the granola has cooled and hardened, break up into clusters using the tip of a wooden spoon. 12. spoon the granola wherever you like onto the bowl. 13. finish with the mango purée and a drizzle of honey if you like… enjoy xxx🥭🍑 #breakfast #yogurt #yogurtbowl #chiapudding #mango
