Extra-Soft Hot Dog Buns ✨ Ingredients * 1⅛ tsp yeast * 1 tbsp + ½ tsp sugar * 286 g milk, about 1 cup + 3 tbsp + 1 tsp * 400 g flour, about 3⅛ cups * 1⅛ tsp salt * 46 g softened butter, about 3¼ tbsp Instructions 1. In a bowl, mix the yeast, sugar, and milk. Add the flour and mix until combined. 2. Add the salt and softened butter. Stretch and fold, or coil-fold, until the butter is fully incorporated. 3. Cover and let the dough rise for about 2 hours, or until doubled in size. 4. Divide the dough into 9 equal portions. Flatten each piece, turn it over, fold and seal it, then roll it into a hot dog bun shape. 5. Place the shaped buns close together in a parchment-lined baking pan, leaving a little space between them. 6. Cover and rest for 15 minutes, then brush the tops with milk. 7.
