CRISPY GARLIC PARMESAN HASSELBACK POTATOES 🥔🧀 They turn out so crispy on the outside and tender on the inside — and they are so fun to eat! Break off each piece and it's kind of like a thicker potato chip of sorts. You can also get creative and customize your toppings, adding sour cream, bacon, etc. I just keep things simple around here. Makes 4 potatoes 4 large Yukon gold potatoes or medium russet potatoes, scrubbed and cleaned 4 tb unsalted butter, melted 1/3 cup olive oil 3 cloves garlic, mashed 1 bunch chives, finely chopped 1/3 cup parmesan cheese, finely grated 1/2 tsp kosher salt 1/2 ground black pepper Preheat oven to 450F. In a small bowl, mix together the butter, olive oil, garlic, chives and parmesan cheese. Cut potatoes into thin slices, leaving 1/4 inch at the bottom unsliced. You can use a potato slicer (as shown) OR place the potato in between 2 chopsticks and then make your slices. This will prevent you from cutting all the way through the potatoes. Line up the potatoes on a parchment lined baking sheet. Rub the garlic parmesan mixture on top of each potato, making sure to get in between the crevices of the potato. Bake until the edges are crispy and the potatoes are tender, about 40-45 minutes.
