Pour in the remaining marinade, the rest of the garlic, water, whole peppercorns, and bay leaves, then bring the mixture to a boil before lowering the heat, covering, and simmering for forty to fifty minutes until the pork becomes tender. Pour in the vinegar and let the liquid come back to a boil to simmer uncovered for ten to twelve minutes without stirring right away so the harsh alcohol bite cooks off. Finally, stir in the sugar if you are using it, taste the sauce, and turn the heat up to medium-high to let it boil until the sauce reduces into a thick, oily glaze before serving hot over steaming white jasmine rice.
