@chefbrandonallen: How to Sharpen a Knife with Japanese Whetstones: Part 1) Equipment I use several Japanese Whetstones to sharpen my knives. How many stones and what grit, depends on the knife’s steel and how dull it is. As of today, posting this video, this is my current process: Shapton 320 (what you need) Naniwa Diamond 600 Shapton 1000 (what you need) Naniwa Diamond 3000 Kitayama 8000 Kitayama Natural Stone Enso Leather Strop Atoma Diamond Plate In the next video, I’ll show you how to use a whetstone and sharpen your knives, which you can then repeat on any sharpening stone.
is there a specific brand/manufacturer you'd reccomend for stones? I've been looking into KING, but still unsure

Do you think 240/1000 or 1000/3000 is better for double sided stones?

I use a very small tool that I love. Two diamond sticks that form my angle. Other side has two ceramic rods. Same angle. Very cheap. Very easy to use. People ask why MY paring knife is so sharp. Now everyone knows.

Which one do you prefer for honing? I’ve seen so many people use that leather paddle but I feel like the leather block strop might be easier or better

What could be cheaper alternatives for sharpening a knife since i don’t have these stones? Would also like if you’d recommend an affordable stone sharpener as well.

I am brand new to your channel. I would love (if it doesn’t exist) just a straight forward beginner need to know series, with maybe an intermediate and expert level series. I’m on a path to curating the perfect kitchen set that will last forever. Love your vids so far
