@arsenioeats: Nobody warned me garlic bread could taste like this… 🧄🐑🔥 Roasted Garlic Butter • 1 head garlic • 2 tbsp olive oil • Pinch of salt → Roast at 375°F (190°C) for 30 min, then mix with: • ½ cup (115g) softened butter • 2 tbsp chopped parsley Birria Lamb • 2 lamb shanks (about 2 lb / 900g) • 4 medium tomatoes, charred • 1 large onion, charred • 4 guajillo chilies • 2 ancho chilies • 2 cups (480ml) beef broth • 2 bay leaves • 1 tbsp cumin • 1 tbsp Mexican oregano • 2 tsp smoked paprika • 1 tsp garlic powder • 1 tsp onion powder • 1 cinnamon stick • 2 cloves • 1 tsp salt • ½ tsp black pepper → Soak the chilies until softened. Blend with the charred tomatoes and onion. Sear the lamb, then pressure cook with the sauce, broth, and seasonings for 60 min. Shred. Assembly • Bread • Roasted garlic butter • Shredded birria lamb • 1½ cups (170g) mozzarella → Bake at 375°F (190°C) for 20 min, then broil for 3 min. Finish with chopped white onion and cilantro.
