Stir in the remaining 2 tablespoons of butter until fully melted. If the sauce is thicker than you'd like, add a little of the reserved pasta water until it reaches a creamy consistency. Return the cooked ground beef to the skillet, then add the bowtie pasta. Fold everything together until the sauce coats every piece of pasta. Sprinkle the remaining ½ cup mozzarella over the top. Cover the skillet for a minute to melt the cheese, then finish with an extra sprinkle of Parmesan before serving.
