In a bowl, mix yeast and milk. Add flour and mix until combined. 2. Add salt and softened butter, then stretch and fold or coil fold until the butter is fully incorporated. 3. Cover and let rest for 2 hours or until doubled. 4. Divide the dough into 4 equal portions. Flatten each piece, turn it over, fold it as shown in the video, seal it, then roll it. Place on a baking tray lined with parchment paper. 5. Cover for 15 minutes. Score them with a sharp knife, brush with milk, sprinkle with thyme, then top with cheese. Bake at 400°F for 10 minutes, then reduce the heat to 380°F and finish baking. 6. Brush with butter as soon as they come out of the oven, then cover until they cool down.
