@amanda__.please: Lemon Poppyseed Muffins Ingredients: 2 eggs ⅔ cup caster sugar 1 tsp vanilla extract ½ cup neutral oil ½ cup Greek yoghurt ½ cup milk Zest of 1 medium lemon Juice of 1 medium lemon 2 tbsp poppy seeds 2 cups self-raising flour Pinch of salt Method: Preheat oven to 180°C and line or grease a muffin tray. In a bowl, whisk together the eggs, caster sugar and vanilla extract. Add the oil, Greek yoghurt, milk, lemon zest, lemon juice and poppy seeds and whisk until combined. Add the self-raising flour and salt and mix until just combined. Do not overmix. Divide the mixture between the muffin holes. Bake for 25 minutes or until lightly golden and a skewer inserted into the centre comes out clean. Allow to cool in the tray for a few minutes before transferring to a wire rack to cool completely.
