I've made an "elderberry cassis" by steeping them in vodka, sugar, and a cinnamon stick for a few months. Makes a great cordial (plus you can take a sip as a tincture if you're feeling a cold coming on.)

I forage a bunch by the rivers out here and pop em in the freezer to get the berries off the stems easier, and it makes them a lot sweeter too. Then I cook em and make syrup

not my story, but i was working at an herbal medicine summer camp as a teen counciler, and someone (unassociated with the camp) wasnt properly educated on raw elderberry and had added a bunch to a smoothie and had major major tummy issues because of it 😭
