Learned this from canning tomatoes: With a knife, cut an X shape at the bottom of a tomato. Put it in a pot of boiling water for about 20-30 seconds. Take out and drop into ice water. Usually peels easily from the X cut and is slightly faster. No the tomatoes won't be mushy. I do like your method though if you don't want to stay babysitting a pot of hot water and rather do a couple other things while the tomatoes get ready

I just rub the knife against the tomatoes and then I peel them. Easier than blanching it

You have a pretty good way but the way I got taught in cooking school is get a pan of water on the go leave that to bubble then you get your tomato and remove the green part and then with a shark knife do like a cross not all the way but half the way through once your water is done at your tomato you will know once it’s reader and that after that add your tomato into an ice bath wait a bit then it’s easy to peal
