Kachori Ingredients * 1 cup plain flour (maida) * 2 tbsp ghee * ¼ tbsp salt * Warm water, as needed * 4 tbsp oil * 1 onion, chopped * ¼ tbsp ginger-garlic paste * 250 g keema (minced meat) * 1 tbsp cumin powder * ½ tbsp black pepper powder * ¼ tbsp salt * 2 tbsp hot sauce * 1 tbsp soy sauce * ½ cup cabbage, shredded * 5 tbsp ghee * 2 tbsp cornstarch * ¼ tbsp baking powder Method 1. Make the dough: Mix maida, ghee, and salt. Gradually add warm water and knead into a medium-soft dough. Cover and rest for 30 minutes. 2. Heat oil in a wok. Sauté the chopped onion, then add ginger-garlic paste and keema. Add cumin powder, black pepper, salt, hot sauce, and soy sauce. Mix well. Add shredded cabbage and stir-fry for a few minutes. Set aside to cool. 3.Mix ghee, cornstarch, and baking powder into a smooth paste. 4.Divide the dough into small portions and roll each into a thin roti. Brush with the paste, fold from all sides, and rest for 5–10 minutes. 5.Roll out each piece again. Add about 2 tbsp keema filling, then close and shape into a kachori. 6.Deep-fry the kachoris in oil over very low heat for about 10–12 minutes per side, until cooked and golden. 7.
