(makes 2-3 small puddings!) you'll need: - 5-6 pitted dates - 100ml hot milk (any milk!) - 50g unsalted butter, softened - 2 eggs - 2tsp vanilla extract - 100g brown sugar - 50g black treacle (or golden syrup) - 175g self-raising flour - 1 heaped tsp baking powder (for the toffee sauce): - 50g unsalted butter - 50g brown sugar - 2tbsp black treacle (or golden syrup) - 1tsp vanilla extract - 125ml double cream (to serve): - vanilla ice cream method: 1. begin by placing the dates in a large bowl and pouring over the hot milk. 2. using a fork, roughly mash the dates until you form a paste (trust the process!). 3. add in the eggs, butter, vanilla, sugar, treacle, flour and baking powder. 4. whisk until thoroughly combined (it may look curdled but not to worry, it will still be perfect!). 5. pour into a greased baking dish (i used a mini butter dish and didn't use all the mixture by the way!). 6. smooth the top using the back of a spoon and bake at 180c (160fan) for at least 45 minutes. 7. meanwhile, make the toffee sauce by adding the butter, sugar, treacle (or golden syrup), vanilla and double cream in a small saucepan. 8. place on a medium heat until the butter begins to melt. 9. keep whisking as the butter melts until you form a smooth and silky sauce. 10. lower the heat and allow to thicken whilst you whisk continuously. 11. check to see if the pudding is baked by poking with a wooden skewer ( it should come out relatively clean, but may have some moisture on it as it's a very sticky cake!). 12. once baked, remove from the oven and pour over some of the toffee sauce (whilst the pudding is hot!). 13. serve with a generous scoop of vanilla ice cream and of course…more of the toffee sauce! enjoy🤎(by the way i know it curdled slightly and i was worried BUT it came out perfect! so not to worry if it happens to you too…) #stp #EasyRecipes #cake #sweettreats #baking
