A classic hearty roast chicken dinner perfect for a comforting Sunday meal. Ingredients: - 1 whole chicken (about 4 lbs) - 2 lbs potatoes, quartered - 1 lb seasonal vegetables (carrots, Brussels sprouts, squash) - 3 tbsp olive oil - 1 tsp salt - 1/2 tsp black pepper - 1 tsp dried thyme - 1 tsp dried rosemary - 4 cups chicken broth - 3 tbsp all-purpose flour - 2 tbsp unsalted butter Instructions: 1. Preheat oven to 375°F (190°C). 2. Season the chicken inside and out with salt, pepper, thyme, and rosemary. 3. Place the chicken in a roasting pan. Roast in the oven for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C). 4. While the chicken is roasting, toss potatoes and seasonal vegetables with 2 tbsp olive oil, salt, and pepper. 5. About 45 minutes into roasting, add the vegetables around the chicken and roast together until tender. 6. Remove the chicken and vegetables from the oven. Let the chicken rest for 10 minutes before carving. 7. Pour the pan drippings into a saucepan. Skim off excess fat. 8. In a small bowl, mix flour with 2 tbsp of cold water to make a slurry. 9. Place the saucepan over medium heat, add the slurry to the pan drippings, stirring constantly to make gravy. Cook until thickened. Add butter and stir until smooth. 10.
