Marry me chicken 💍 Ingredients (serves 2): For the chicken: 2 chicken breasts 1 tsp olive oil 1 tsp smoked paprika 1 tsp oregano Salt and black pepper For the sauce: 1 shallot, finely chopped 2 garlic cloves, minced 1 tbsp tomato puree 0.5 tsp dried oregano ¼ tsp chilli flakes (optional) 4–5 sun-dried tomatoes, chopped (about 20g) 150ml chicken stock 100g light cream cheese 2 tbsp grated Parmesan 1 large handful baby spinach (optional) Fresh basil, chopped Served with: Mashed potato Tenderstem broccoli, pan fried Extra parsley Extra parmesan Firstly, season your chicken and then either pan fry until golden and cooked through (about 5-10 mins each side) or pop in the air fryer for 20 minutes on 200 degrees C. I popped mine in the air fryer until fully cooked through. Next, fry off your onion and garlic until softened. Then add your tomato puree, cream cheese and chicken stock, mixing until a sauce forms. Add the sun-dried tomatoes, all the seasonings, fresh basil and Parmesan. Mix thoroughly and leave to simmer. Taste and adjust seasonings for preference. In the meantime, prepare your mashed potatoes and tenderstem broccoli (or sides of choice).
