I don’t rest steak before I cook it. I was always taught to rest steak after cooking it by leaving it for a minute or two to let the meat rest and the juices redistribute. Older cookbooks often recommended taking steak out of the fridge 20-60 minutes before cooking, but more recent testing suggests this has little to no effect for most home-sized steaks.

Please don’t let your proteins (even steak) get to room temp. Totally ok to let the steak sit for a little bit while heating your pan or setting up your grill.

I thought rest was the term used for after cooking when you allow the cooked meats to relax and the juices to retain. bringing something to room temperatures is just bringing something to room temperature.
