I get what you mean, but as a barista there is literally no time to whisk every single matcha from scratch during rush’s. People would complain that it took to long to get their matcha. Being in a time rush can also lead to the matcha not being whisked properly, which creates clumps which creates more work because drinks needs to be remade. So making it fresh does take much longer. Were literally damned if we do and damned if we don’t. If you want it made in a certain way and have the highest quality, its best to do it at home, where you can do it exactly how you like it. But I also understand wanting to be able to order a matcha with the same quality as you can do when you’re home. And honestly you should be able to do it, it just doesn’t work in larger coffee shops, or at least not the ones I’ve worked at. As someone who is working as a barista at a coffee shop where we mixed by hand at first, and then switched to this method. Our consumers/guests actually enjoy matcha made with this method much more 🤷🏼♀️

From a cafe owner who cares about quality: we’ve taste tested out matcha and many different ones fresh and pre batched. Our pre batched made with room temp water tastes as good, if not better, than anything whisked fresh at 160 degrees. It’s so marginal that our entire staff can’t tell the difference or prefer one over the other. If it’s stored well and only held 4-6 hours max, it’s totally fine for lattes. If you order a shot of matcha as matcha was intended, we whisk fresh. This is how shops should do it.
