RECIPE (serves ~4): For the egg: 8x eggs 100g cottage cheese 100g cherry tomatoes Fresh basil, chopped 50g feta To a square oven safe baking dish, add the eggs and cottage cheese, and whisk until well combined. Mix through the cherry tomatoes and basil. Bake in the oven on 180℃ for 20-25 mins. Leave to cool for 5-10 mins, then slice into 4 portions. For the breakfast sandwiches: 4 english muffins 2 tbsp pesto 4 slices cheese Toast the english muffins, spread each with ½ tbsp pesto, then top with the cooked egg, a slice of cheese and the muffin top.
