Since you mention that some are good and some are bad, the bitterness may be from cucurbitacins (found in melons, gourds, cucumbers, etc). Eating the bitter ones could lead to a really bad time. Toxic squash syndrome (cucurbitacin poisoning) is a real thing. 😬
